Finally some good self-made chocolate ice cream

Ice cream maker

Last summer I bought this ice cream maker. Some of the ice cream I made was quite OK, but only now did I succeed in making ice cream that compares favorably to Mövenpick or similar. The secret is: EGGS and lots of FAT and SUGAR. Here is the recipe:

  • 650 ml full-fat (3.5%) milk
  • 100 g normal sugar (sucrose) and 20 g fructose
  • a pinch of salt
  • 100 g chocolate (70% cocoa) in small pieces
  • 2 beaten eggs
  • 250 ml cream (at least 30% fat)
  • vanilla

Heat 500 ml milk, the sugar, salt and the chocolate in a pot under constant agitation until the chocolate has melted and the mixture is about to boil. Pour 250 ml of this hot mixture into the beaten eggs while mixing. Pour the egg/chocolate mixture back into the pot and boil on low heat for 2 minutes while stirring. Add the vanilla and let the mixture cool down to fridge temperature. Beat the cream and mix gently with the cold chocolate mixture. Pour immediately into the ice cream maker and start the machine.
